Do I seem a little salad-obsessed? My daughter would respond with a definitive “YES!” Personally, I don’t think you can eat too much salad. And it’s not like I’m ignoring my friends hamburger, cake and alcohol.
So let’s add one more delicious salad to our repertoire, shall we?
This was soooooo good. Lettuce, cabbage, apples, pears, mango, nuts and cheese. And a spunky little red-wine vinaigrette. It’s a great balance of flavors and easily adaptable. Don’t have hazelnuts? Use sunflower seeds. Can’t find a ripe pear? Use jicama. The substitutions are truly endless.

This looks lovely, and tasty! But, can we also discuss the little slices of what looks like toasted baguette on the back rim of the plate? Crostini perhaps? If that is not what it is, please fill me in because it looks like the perfect accompaniment to this salad! I could eat that entire photo right now!
I agree with Susan. And those do look like crostini. What I like about chopped salads is that they are a lot neater to eat in public!
Good eye Susan! I just sliced some bread, lightly buttered it, sprinkled a little grated parm on top and put it under the broiler. You could also brush them with olive oil instead and then rub a cut clove of garlic over them when they come out of the broiler. Heaven!
