Right here is a perfect example of what I like this cookbook so much: this is turkey breakfast sausage and it will take you about 5 minutes to make.  It’s ground turkey plus some herbs and spices (fennel, herbs de provence, sage), and a little maple syrup just to add another breakfast-y element,  Combine, form into patties and saute.  Of course you can do this with pork too.  And why not?  Why not make your breakfast sausage fresh and exactly the way you want it.  Add some red pepper flakes or Sriracha if you like spice.  Sun-dried tomatoes and basil.  Jalapenos.  Whatever.

I served this with one of Gwyneth’s frittatas for a breakfast-for-dinner night.
