Browned Butter Blondies

Remember when it seemed like people were throwing browned butter in everything?  Suddenly it was bringing new life to old favorites like Rice Krispie Treats, Mexican Wedding Cookies, and every butter-based sauce imaginable. And this is not just a theory, I have receipts.  Here’s a an article from Bon Appetit called “How To Make Brown Butter and Use it for Everything.”

Like many new things I suspect we all went a bit overboard in our collective enthusiasm but hey, it’s not a “cold-shoulder” blouse right? It’s probably got some longevity and will find a foothold in our culinary repertoire.

So Blondies.  The happy intersection of brownies and chocolate chip cookies.  Of course they’re great.

Cook’s brings a couple of twists in addition to the brown butter: corn syrup replaces the white sugar and there’s a formidable two tablespoons of vanilla to boost flavor.  Oh, and milk chocolate chips vs. the usual semi-sweet (but you’re good using whatever you have on hand).  I left out the pecans due to a workplace nut allergy and threw in a few more chips to compensate.

I was super annoyed to find that although I could have sworn I had a box of Maldon in my cupboard it was nowhere to be found when it came time for the optional (not optional) sprinkling on the blondies, so that element was sadly missing.  I do love my salty+sweet combo so a missed opportunity and an excuse to make these again.

    Your directions make no sense! The pan is 13×9, so why in step 1 are you telling me to have the two foil sheets measure 13″ and 9″? How are you going to have overhang by doing THAT?

      Hi Linda,

      Sorry this was confusing. The 13″ and 9″ is meant to be the WIDTH of the sheets and they should be as long as you need them to be to hang over the edges (both long and short edges) of the pan in an X formation. Hope that helps!

    Thank you for publishing this recipe! Saved me a subscription to Cook’s Illustrated. These blondies are amazing. I added pecans + 1/3 cup milk chocolate chips + 1/3 cup butterscotch chips. I also recommend cooling them in the fridge overnight and cutting them the next morning for sharper edges.

    These kept coming out delicious but way too gooey even when i tried adding 5-10 min to the bake time. I figured out that you need to use a metal pan instead of glass or ceramic, and the texture also improved when i increased the flour to 300g (2.5 cups). I use a nonstick pan and don’t need the foil/parchment sling, the whole blondie will flip right out.

    I made these and used many of the comments to adjust several things. First I used 2-1/2 cups of flour. I also used a mix of milk and dark chocolate chips (Ghirardelli) and used about a full cup. A half cup just didn’t seem like enough.
    I did use the foil liner and lightly sprayed it and the Blondies came out very easily. Due to my own poor timing, I put them in the refrigerator for about 30 minutes after an hour at room temp to accelerate the cooling. That was great for cutting in nice, neat squares.
