Roasted Carrots

Insanely good. My daughter said “these taste like sweet potato fries” and she was 100% on the nose. This is one instance where a recipe meant for two was not nearly enough. I could have eaten an entire baking sheet of these.

And all it is is carrots and a sliced fennel bulb, tossed in a little butter and salt and pepper. First you roast with the pan covered in foil so the veggies can steam a bit and become tender on the inside. Remove the foil and continue to roast for that amazing caramelizing on the outside. When vegetables are this good you will wonder why we need junk food.

My only suggestion is to cut your carrots into somewhat equal-sized pieces so they roast evenly but even if you don’t it’s all good.
