This recipe does not need me to sing its praises.  It’s got cheese, bacon, eggs, mayonnaise and breadcrumbs to do that.  Yes, it’s as good as it sounds.  You will want to be alone with it in a dim room and a big spoon.

Even though the word “summer” appears in the title, I actually think this is better prepared and served in the colder months.  I hate hiding the flavor of seasonal produce under lots of “stuff” and this is just one of those warm and hearty things that you will crave when the farmer’s market is long gone and we’re left with the pale, tasteless shadows of real produce.

 

You can, of course, leave out the bacon to make this vegetarian.
